I wouldn't eat it raw, but I assume it tastes kind of like chicken.

I was just going to say, I imagine it tastes somewhat like chicken. I have no idea why.

I hate those people who say every new meat tastes like chicken, I bet headcrab tastes nothing like chicken, it doesn't smell like cooked chicken, I bet it tastes like....grasshoppers

Interestingly enough, in Half-Life 2, Vortigaunts (i think in Black Mesa East) are seen preparing headcrab meals. Of course, there isn't really much else for the rebels to eat, eh?

I am thinking that headcrabs might actually taste something like crab meat. It might be how they (the citizens of Earth after HL1) named it. Headhumper + Crab = Headcrab. Bullsquids, on the other hand, taste like caterpillars.
