Doom 3 is surprisingly easy on Veteran difficulty, but a true challenge on Nightmare.

E3 is what has kept Duke Nukem Forever alive so long.

Ninja Gaiden is one of those games I MAY beat some day, but it's not likely.

My definition of a simulation style racer is an overly focus on the cars themselves, tuning them, the different statistics between each model, and an overly focus on realism in terms of driving and such. Arcade racers focus more on easy controls and trying to make it a fun experience.

You should try out Hot Pursuit then. It was developed by the team behind the Burnout franchise.

I like it for the single player. If I want multiplayer I play Enemy Territory.
