I'm listing "Only certain types" even though it's between that and "hell yeah." There are some I don't like, mostly the cheap kinds and that sorry excuse for a "cheese" American cheese which is closer to plastic than it is an actual cheese.

My fridge currently has some smoked cheddar in it, a small cube of Dubliner, a wedge of Gruyere, and a wedge of Gouda.

Oaxaca cheese... (it's pronounced wah-ha-cah) Mexican string cheese, better version of mozzarella.

Provolone.

Medium cheddar.

Velveeta. (a soft cheddar/American cheese blend that's great for cheese sauces)

Swiss cheese.

Colby.

Mozzarella.

Ricotta. (as an ingredient, or as a replacement for cream cheese which I hate)

Parmesan.

Asiago.

Romano.

Also, I distrust any cheese that has more visible mold than 3 month old bread.

Don't insult me. I have trained professionals to do that.
