I don't recall there ever being a thread for posting good recipes of our own creation, so i figured I'll start one of my own.
First recipe is a two parter starting with somewhat spicy chicken for tacos/burritos, and the second part is for spicy chicken soup.
TACO/BURRITO CHICKEN
3.5-4 lbs boneless skinless chicken legs/thighs (must be dark meat) sliced into bite sized chunks
8-10 oz water
2 oz toasted sesame oil
2 tbsp salt
1/8 tsp cumin
1/2 tsp mustard powder
1 tbsp garlic powder
1 1/2 tbsp onion powder
2-4 oz Tabasco
1/2 pinch of cayenne pepper powder
Make sure you keep all of the chicken fat, since it'll go in with the chicken. Put everything but the chicken into a pan, and bring to light boil. Add chicken. Stir. Make sure the chicken gets thoroughly coated with the sauce, then cook covered until all the chicken is soft and fully cooked all the way through, stirring occasionally to ensure even cooking and prevent burning. Makes 6-8 burritos.
SPICY CHICKEN SOUP
The remaining liquid and bits of chicken from the previous recipe
6 cups water
4 oz Anasazi beans
2 oz lentils
2 oz long-grain brown rice
Combine 3 1/2 cups water and the other liquid, bring to to boil, add beans, cook for 8 hours at low simmer. Add rice and remaining water, stir occasionally. Cook for 40 minutes, or until rice is soft. Makes 2-4 bowls of soup.
